We are being audited by our central bank. One question that was made by them is if Cyclos registers who sees what, concerning admins. Is there a way to know that our employee saw the data of customer x?

If there isn't, this can be a suggestion to future versions of Cyclos.

This is not supported in Cyclos.
It is however written to the log files.
A solution would be to write the log files to an external database (this can be configured in the cyclos.properties file)
Than you access the database, maybe with a tool, to retrieve the information.
It will be a bit of work but it is certainly doable.
